This recipe is more than just a potato wedge recipe or any boring side dish, it includes crispy potatoes topped with feta cheese, kalamata olives, cucumbers and cherry tomatoes, tossed with loads of herbs and spices and a lemon and Greek yogurt dipping sauce on the side. To make Greek Potato Wedges, you will need the following ingredients:
Preheat oven to 375°F.
Place the potato wedges on a baking sheet, drizzle with olive oil and season generously with sprinkles of garlic powder and oregano, salt and pepper and toss together until fully coated.
Arrange potato wedges, neatly, in a single layer, skin side down and bake for 38-40 minutes until deeply golden and extra crispy.
In a small bowl, whisk the Greek yogurt, lemon juice, 1 tablespoon parsley and red pepper flakes, together, to combine.
