Oh yum! This Grilled Chicken Corn Salad goes well on any summer table. This is a fantastic lunch recipe or it can make a delicious light dinner too. I love the ingredient combination of crisp lettuce and seasonal cherry tomatoes mixed with creamy avocado and crunchy corn. A real classic!
Start by combining lettuce, cherry tomatoes, onion and avocado in a large salad bowl. Add corn kernels and toss gently together. Prepare a dressing by whisking oil, vinegar, salt, pepper, and oregano together and pour this over the salad and toss lightly to coat. To serve, place the salad on serving plates and arrange half a sliced grilled chicken breast on top of the dressed salad. Delicious!
To make my version of Grilled Chicken Corn Salad, you will need the following ingredients:
Mix 4 cups of Romaine lettuce, 2 cups of cherry tomatoes, ½ a chopped red onion, and 1 avocado together in a large salad bowl.
Slice the grilled corn kernels off the 2 cobs and add to the salad bowl and toss gently to combine.
In a separate small bowl, mix ¼ cup of olive oil with 4 tablespoons of apple cider vinegar, ½ a teaspoon of salt, ¼ teaspoon of black pepper, and ½ a teaspoon of dried oregano to make a dressing.
Slice two grilled chicken breasts into bite sized pieces.
To serve, divide the salad between individual serving plates and arrange half a sliced grilled chicken breast on top of each serving.
