1 tbsp White wine vinegar
3 tbsp Olive oil or rapeseed , plus extra for frying
Salt to taste
Black pepper to taste
2 Carrots large , peeled
1 (8.8-oz) block Halloumi cheese sliced
3.5 oz Corn salad or baby spinach

To start, segment the oranges, catching any juices in a bowl. Combine the orange juice with mustard, vinegar, and oil. Season with salt and black pepper to taste. Shave the carrots into ribbons using a vegetable peeler. Gently toss the carrot ribbons with the dressing. Sear the halloumi slices until golden on both sides. Toss the corn salad through the dressed carrots. Divide the salad among four serving plates and top with the fried halloumi and oranges. Serve and enjoy!

Steps to make Halloumi, Carrot & Orange Salad

Prep oranges

Cut away peel and pith from 2 large oranges. Using a small serrated knife, segment the orange, catching any juices in a bowl. Then squeeze any juice from the off-cut pith into the bowl as well.

Make dressing

To the bowl with orange juice, add 1 ½ tablespoons whole-grain mustard, 1 ½ teaspoons honey, 1 tablespoon vinegar, 3 tablespoons oil of choice, and a pinch of salt and black pepper and mix well.

Prep carrots

Use a vegetable peeler to peel carrot ribbons into the dressing bowl and toss gently.

Cook halloumi

In a skillet, heat a drizzle of oil and add the sliced halloumi. Cook the halloumi for a few minutes until golden on both sides.

Combine carrots and salad

Toss the corn salad through the dressed carrots.

Assemble salad

Divide the salad between 4 plates and top with fried halloumi and oranges.
