
This Healthy Chicken Zucchini and Corn is another one of my one-pan wonders! This whole delicious meal is cooked in a cast-iron skillet and takes about 15-20 minutes of cooking time. This means you can have a delicious meal on the table in under 30 minutes! Perfect midweek cooking.
Start by cooking garlic and chicken in a cast-iron skillet. Transfer cooked chicken to a bowl and set aside before adding corn and zucchini to the same skillet and cooking. Once the vegetables are tender, return the chicken to skillet and stir. Remove the pan from the heat and sprinkle with herbs and more garlic (depending on your preference!). Serve with a side salad or brown rice, quinoa or potatoes.
