For chicken:
1 lb Chicken Breast cut into 1-inch pieces
1 tsp Avocado oil
1 clove Garlic large, crushed
¼ tsp Salt
Black pepper ground, to taste
For zucchini and corn:
1½ lbs Zucchini medium, cut into half moon shapes , approx 3 zucchini
2 cups Corn frozen or fresh
1 tsp Avocado oil
1 clove Garlic large, crushed

For garnish:
1 clove Garlic crushed, optional
¼ cup Mixed greens dill, parsley or green onions, chopped

This Healthy Chicken Zucchini and Corn is another one of my one-pan wonders! This whole delicious meal is cooked in a cast-iron skillet and takes about 15-20 minutes of cooking time. This means you can have a delicious meal on the table in under 30 minutes! Perfect midweek cooking. 

Start by cooking garlic and chicken in a cast-iron skillet. Transfer cooked chicken to a bowl and set aside before adding corn and zucchini to the same skillet and cooking. Once the vegetables are tender, return the chicken to skillet and stir. Remove the pan from the heat and sprinkle with herbs and more garlic (depending on your preference!). Serve with a side salad or brown rice, quinoa or potatoes.

Steps to make Healthy Chicken Zucchini and Corn

Heat garlic

Preheat a cast-iron skillet over medium heat. Add 1 teaspoon of avocado oil and swirl to coat. Add 1 crushed garlic clove and cook for 10 seconds.

Cook chicken

Add 1 pound of chicken and sprinkle with salt and pepper to taste. Cook the chicken for 8-10 minutes, uncovered. Stir occasionally as it cooks. Transfer the cooked chicken to a bowl and set aside.

Cook zucchini and corn

Add 1½ pounds of zucchini to the skillet with 2 cups of corn. Cook, uncovered for 5 minutes, stirring occasionally.

Add chicken, herbs and garlic

Return the chicken to the skillet and stir. Remove the skillet from the heat and sprinkle with herbs and some more garlic for added flavor. Stir to combine.

Serve

Serve with your favorite side salad, quinoa or brown rice for a healthy, tasty dinner.
