3 Bananas large, ripe, peeled
⅓ cup Almond milk unsweetened
¼ cup Coconut oil unrefined, melted
2 tsp Lemon juice
2 cups Oat flour or spelt flour or gluten free all-purpose
½ cup Rolled oats not quick oat
⅓ cup Almond flour raw
2 tsp Baking powder
½ cup Coconut sugar or unrefined cane sugar of your choice
1 tbsp Cinnamon ground
1 tsp Vanilla extract
2 tbsp Flaxseed meal or chia meal
⅓ cup Water lukewarm
Optional
1 Bananas whole, peeled
⅓ cup Walnuts chopped or unsweetened shredded coconut

I love a good Healthy Vegan Banana Bread and this recipe tastes just like the real deal. Using all healthier replacements for the regular flours, sugars, dairy milks and even eggs to make a healthier, vegan loaf that is just delicious. Top with beautiful banana slices that give your loaf an extra moist touch and brush with maple syrup for a final, shiny finishing.

Steps to make Healthy Vegan Banana Bread

Preheat oven and prepare baking pan

Preheat the oven to 360 °F and line a 9x5-inch loaf pan with baking parchment paper.

Prepare flax/chia egg

In a small bowl, whisk 2 tablespoons flax or chia meal with ⅓ cup lukewarm water. Set aside and allow to set for 10 minutes.

Mash bananas

In a bowl, using a fork, mash 3 peeled bananas.

Prepare banana batter

In a medium mixing bowl, using an electric mixer, beat the mashed bananas with ⅓ cup of unsweetened almond milk, ¼ cup of melted coconut oil and 2 teaspoons of lemon juice for 1 minute until a batter forms with no lumps.

Combine dry ingredients

In a different bowl, whisk 2 cups of oat flour, ½ cup of rolled oats, ⅓ cup of almond flour, 2 teaspoons of baking powder, ½ cup of coconut sugar and 1 tablespoon of cinnamon to combine.

Combine all ingredients

Add dry ingredients to the bowl of banana batter along with the flax or chia egg and 1 teaspoon of vanilla extract. Using a spatula, combine all ingredients but don't over mix.

Add walnuts

Fold in ⅓ cup of chopped walnuts if you wish.

Decorate loaf

Transfer the batter to the prepared loaf pan and top with slices of fresh banana, if you wish. Gently press them into the batter slightly.

Bake

Bake in the preheated oven for 50-60 minutes until a wooden toothpick inserted into the center comes out clean with a few crumbs.

Add maple syrup

Allow the banana loaf to cool in the pan for 10 minutes before removing and generously brushing with 2 tablespoons of maple syrup.

Serve

Cool for about 4 hours before slicing and serving.
