1 cup Mixed rice or dry brown rice
1¼ cup Water
1-2 tbsp Olive oil extra virgin
½ Red bell pepper diced
½ cup Cabbage shredded
2 Carrots diced
½ Onion diced
2 Eggs
3-4 tbsp Coconut aminos
Salt to taste
Pepper to taste

This Easy and Healthy Vegetable Fried Rice is exactly like the Asian inspired veg fried rice dish that you usually order from your local Chinese take-out and now you can make a healthier version, in your own home, with our, fresh and exciting recipe. Mixed rice, red bell pepper, cabbage, carrot, onion, eggs and coconut aminos. Being healthy can be so simple!

Steps to make Easy and Healthy Vegetable Fried Rice


Cook rice


Using an Instant Pot, combine 1 cup of dry brown rice with 1¼ cups of water and cook on the manual, high pressure setting for 25 minutes. Once cooked, quick release and cool for about 5-6 minutes allowing as much steam to escape as possible.


Cook vegetables


In a large skillet heat 1-2 tablespoons of olive oil. Add ½ diced red bell pepper, ½ cup of shredded cabbage, 2 diced carrots and ½ diced onion. Toss and saute for about 4-5 minutes until the vegetables have softened.


Add eggs


Add 2 eggs and cook stirring and folding until eggs are thickened and cooked through.


Add rice and coconut aminos


Add cooked rice to the the skillet with 3-4 tablespoons of coconut aminos. Toss to combine everything together and saute for about 2-3 minutes for flavors to blend.



Season with salt and pepper to taste for serving.
