Homemade Black Olive Bread – is a foolproof bread recipe that is easy to make and requires a few ingredients you may already have on hand. While I bake all year long, summer is one of my favorite times to bake because this is the time when my house is at the perfect temperature for my dough to rise.
It’s nothing like fresh-baked bread! I absolutely love bread, and I love quick and easy homemade bread recipes. So this Mediterranean black olive bread absolutely fits the bill. Plus, I let my stand mixer do all the kneading work for me. Then just a bit of hand kneading to make sure the dough has the right consistency and form a ball. Actually, you can be done with the mixing of the bread in about ten minutes. And the rest of the time needed is rising and baking. The result is a crispy crust, soft and flavorful crumb. Just remember to set a pan of hot water in the oven to make some steam. Adding steam during baking will help crisp up the crust.
To make the Homemade Black Olive Bread, you will need the following ingredients:
In a bowl of a stand mixer, add ¾ cup lukewarm water and sprinkle 1 teaspoon active dry yeast on top. Let sit for 5 to 10 minutes and stir to combine.
Add in 2 ½ cups plus 2 tbsp all-purpose flour, ¾ teaspoon sa, and 1 ½ tablespoon olive oil and knead on lowest speed until just combined.
Add in ¾ cup chopped pitted black olives.
Knead on the second speed for 5-6 minutes until the dough starts to pull away from the sides of the bowl and has a compact form. The dough should be slightly tacky but if it sticks to your hands, add a little more flour ½ a tablespoon at a time.
On a lightly floured surface, knead the dough a few times by hand to form a ball.
Place the dough in a lightly oiled bowl and turn the dough around to cover with oil. Cover the bowl and let the dough rise for about 2 hours or until doubled in size.
Scrape the dough out of the bowl on a lightly floured surface and knead a few times. Then roughly flatten and fold into the desired shape. Sprinkle the top with flour.
Transfer to a parchment-lined baking sheet, loosely cover, and leave to rise for 30-60 minutes or until almost doubled in size.
Preheat the oven to 425 °F and place an empty baking pan in the bottom of the oven.
Score the dough and place the baking sheet with the dough on the middle rack of the oven. Carefully add 1 cup of boiling water to the baking pan at the bottom of the oven and bake for 30 minutes.
Let cool before slicing. Serve alongside your favorite Mediterranean dishes and enjoy!
