Steps to make Homemade Golden Syrup


Dissolve sugar


In a saucepan, place 1 ¼ cups water and 4 cups sugar. Stir to combine. Bring it to a boil, stirring regularly, until the sugar is dissolved.


Add lemon juice


Once boiling, gently stir in 2 tablespoons lemon juice or ½ teaspoon citric acid.




Reduce the heat to a gentle simmer, leaving the saucepan uncovered, let it simmer on low for 40-60 minutes or longer until the syrup turns amber. Don’t stir. If using a candy thermometer, it should read about 240-250 °F. If the syrup is too thick and stiff, reheat it, adding a bit of water. If the syrup is too runny, let the syrup caramelize longer.


Pour in jar

Turn off the heat, let cool for a few minutes, then pour the syrup into a clean glass jar and leave to cool completely before closing the jar with a tight sealing lid.


Store or use

Store the golden syrup at room temperature for several months and use in recipes as directed.
