Just add all of the ingredients to your Instant Pot and let it do its work. This recipe yields 6 servings, so it’s great for a Sunday meal-prepping session. The leftover coconut milk brown rice keeps well in an airtight container in the refrigerator for up to 5 days.
To make the Instant Pot Coconut Brown Rice, you will need the following ingredients:
Place 2 cups rice, 1 ½ cups water, 13.5-ounce can coconut milk, and ½ teaspoon fine sea salt in your Instant Pot pressure cooker and stir to combine.
Close the lid and turn the Venting Knob to the Sealing Position. Cook at High Pressure for 20 minutes, then Quick Release the pressure.
Fluff the rice with a fork. Serve with garnishes of choice.
