A lentil based chili made with onions, garlic, celery, bell peppers, canned tomatoes, quinoa and pinto beans and I choose spices like chili powder, cumin and oregano to add flavor to this dish. This meal has a rich source of protein, without the meat!
To make Instant Pot Lentil and Quinoa Chili, you will need the following ingredients:
In an Instant Pot, place 1 diced onion, 4 minced garlic cloves, 1 chopped stalk of celery, 2 diced bell peppers, 1 can of diced tomatoes, 4 cups of vegetable broth, 1 can of water, 1 cup of brown or green lentils, 1 can of pinto beans, 3 teaspoons of chili powder, 2 teaspoons of cumin, 1½ teaspoon of oregano, ⅓ cup of uncooked quinoa, 1 can of tomato sauce, 1½ teaspoon of sea salt and ½ teaspoon of black pepper. Mix together.
Close the Instant Pot with the lid and set the timer on high pressure for 20 minutes.
Once the Instant Pot starts beeping, release naturally for 10 minutes then switch the setting to quick release.
Serve hot and compliment your dish with shredded cheese, Greek yogurt, sour cream, green onions, cilantro or avocados, if you wish!
