I love instant pot dinners and this Instant Pot Ranch Chicken and Rice is a definite winner. My babysitter especially loves preparing it for the kids because it takes very little effort for a lot of happy faces.
Simply put, uncooked, skinless and boneless chicken breasts with uncooked rice and flavor with diced white onions, ranch seasoning and chicken broth. Once cooked add some heavy cream and melt Cheddar cheese to make your dish extra creamy and delicious.
To make Instant Pot Ranch Chicken and Rice, you will need the following ingredients:
Heat the instant pot on the saute setting.
Season one pound of boneless, skinless chicken breasts with ½ teaspoon of salt and pepper each.
Pour 2 tablespoons of oil into the heated instant pot liner and add the seasoned chicken. Cook for about 3-5 minutes until browned on both sides. Remove and set aside.
In the instant pot, cook 1 cup of diced, white onion for about 3-5 minutes until soft and translucent.
Scrape up any brown bits from the chicken and onions and add about ¼ cup of chicken broth, or as needed. Turn off the instant pot heat.
Place the browned chicken breasts on top of the cooked onions, and sprinkle with 1 package of 1 ounce ranch seasoning mix, then add 1 cup of uncooked rice, and finally 1 cup of chicken broth. Use a wooden spoon to push the rice into the broth to cover completely for even cooking.
Close the lid and cook on manual pressure for 8 minutes then allow a natural pressure release for 10 minutes.
Use 2 forks to shred the chicken into pieces and add ½ cup of heavy cream and 1½ cups of shredded Cheddar cheese. Stir until melted through.
Serve hot!
