These Irish Soda Bread Muffins get their name from the fact that there is baking soda used in the batter to make them instead of traditional yeast and combined with buttermilk for a soft dough, bread like muffin.
We’ve chosen to add raisins and caraway seeds for flavor and eaten with a cup of cinnamon tea, they’re great on a winter’s afternoon!
To make Irish Soda Bread Muffins, you will need the following ingredients:
Preheat the oven to 400 °F and line a muffin tray with paper liners.
In a large bowl, combine 3 cups of all-purpose flour, 1 cup raisins, ½ cup plus 2 tablespoons of white sugar, 1 tablespoon caraway seeds, 1 tablespoon baking powder, 1 teaspoon of salt and ¼ teaspoon of baking soda.
In a small mixing bowl, whisk 1¾ cup of buttermilk and 1 egg until combined then stir into the flour mixture.
Pour in ¼ cup of melted butter and fold into the batter.
Spoon batter into the paper liners in the muffin tray and then bake in the preheated oven for about 20-30 minutes until a wooden toothpick inserted into the center comes out clean.
Cool for a few minutes before enjoying warm or at room temperature!
