Jar Chicken Salad with Pineapple & Potatoes

Share

I love to make a couple of batches of this Jar Chicken Salad with Pineapple and Potatoes for any potluck picnics I go to. Jar salads are so handy for potlucks because they are individually packaged so no sharing required from a big bowl. This recipe is really easy to double or triple too if you want to make salads for a crowd.

Start by cooking potato and carrot in boiling water. Dice when cool and set aside. Grill the chicken on both sides on a griddle. Season to taste with salt and pepper and dice into small chunks. Layer the salad into the mason jars, starting with a layer of potato and carrot followed by the remaining ingredients. Top with mayo and season to taste with salt and pepper. Enjoy!

To make my version of Basic Mason Jar Salad, you will need the following ingredients:

Creative little lunch or snack for any time of the week would recommend it for sure .

Not bad but i think it would be better in a bowl so you get a bigger meal.

Nahla Mastropolo

It's good just needs a few more spices other than that brilliant idea.

Jar is just too tiny for all this and making smaller portions by cutting everything takes too long.

Andie Sturza

One of my many favorite dishes, sweet and savory taste to die for!

Brought this with me to work today and people were questioning why its in a jar, later this week i noticed others bring jar oatmeals and snacks lmao.

Too many potatoes! it was very freaking delicious but i added a little less potatoes cause with the written amount you cant fit anything into the jar haha.
