I love to make a couple of batches of this Jar Chicken Salad with Pineapple and Potatoes for any potluck picnics I go to. Jar salads are so handy for potlucks because they are individually packaged so no sharing required from a big bowl. This recipe is really easy to double or triple too if you want to make salads for a crowd.

Start by cooking potato and carrot in boiling water. Dice when cool and set aside. Grill the chicken on both sides on a griddle. Season to taste with salt and pepper and dice into small chunks. Layer the salad into the mason jars, starting with a layer of potato and carrot followed by the remaining ingredients. Top with mayo and season to taste with salt and pepper. Enjoy!

    When the veggies are cooked, drain the water from them in a strainer and dice them. Set them to one side in separate bowls.
