
Warm Kale and Caramelized Mushroom Salad is a really great winter salad. Who says salad has to be chilled? A warm salad can make a really delicious meal in winter. For this recipe, I use assorted mushrooms such as beech mushroom and champignon. Also you can use porcini, shiitake cremini, chanterelle or oyster. If any of the mushrooms have a woody stem, I trim them off and thinly slice the mushrooms.
I start this salad by sautéing mushrooms in oil. Then I add butter and shallots and continue to cook them until the shallots are soft and translucent. I then add sherry and once it has almost fully evaporated, I remove the skillet from the heat. I make a dressing from olive oil with the sherry vinegar, mustard, and honey. I then assemble the salad and top with goat cheese. Delicious!
