4 oz Beef (chuck, loin, or stew meat), sliced into thin, short strips
1 tbsp Soup soy sauce
2 tsp Garlic minced
12-14 oz Potatoes peeled, halved and sliced
8 oz Tofu sliced into ⅓-inch thick pieces
3 oz Starch noodles soaked in warm water for 20 mins
2 Scallions cut into 1-inch chunks
6 cups Water
Salt to taste
Black pepper to taste

    Korean Potato Soup with Beef – Gamjaguk is a traditional Korean soup. It is really no secret that I love cooking Asian-inspired dishes at home. And I have a confession to make: this is one of my favorite simple soups because this recipe requires only a few ingredients and comes together quickly. Unlike many soup recipes, this one doesn’t require a long simmer to build complex flavor, as the addition of soup soy sauce brings complexity. This sauce is unique to Korea. It is light-colored, salty, and adds umami to the dish.

    To make the Korean Gamjaguk, start off by marinating the thinly sliced beef in soup soy sauce and garlic mixture. Now, shortly sauté the beef slices and add water. Bring to a boil and simmer. Then add potatoes, tofu and cook until tender. Finally, add noodles and scallions, and you are done. Quick and easy! This Asian-inspired soup is simple yet satisfying, and budget-friendly too.

    Combine beef, sauce, and garlic

    In a bowl, combine 4 ounces sliced beef, 1 tablespoon soy sauce, and 2 teaspoons minced garlic.

    Sauté beef

    In a medium pot, sauté the beef slices until browned.

    Add 6 cups of water. Increase the heat to high, cover and bring to a boil. Skim off the foam and reduce the heat to medium high. Cook, covered, for 5 minutes.

    Add potatoes, tofu, salt and pepper

    Add 12-14 ounces sliced potatoes, 8 ounces sliced tofu, salt and black pepper to taste. Bring to a boil and cook for about 5 minutes or until potatoes are tender.

    Add noodles and scallions

    Add 3 ounces soaked noodles and 2 chopped scallions, cook for 1-2 minutes more.

    If you want to make the soup spicy, add some chili pepper flakes. Serve in bowls, and enjoy!
