For pasta salad:
8 oz Penne pasta grain-free
1 cup Asparagus chopped
2 tbsp Red onion chopped
2 tbsp Pistachio nuts chopped
1 handful Basil chopped
1 handful Parsley chopped
For dressing:
¼ cup Lemon juice
¼ cup Olive oil
1 clove Garlic minced
1 tsp Mustard stone ground
1 tsp Honey or maple syrup to keep it vegan
1 pinch Salt
1 pinch Black pepper

Though the recipe is pretty straightforward, it is crucial not to overcook the delicate stalks of asparagus. An easy way to prevent this is to shock the asparagus in an ice bath. In fact, you should remove asparagus from the boiling water and immediately transfer the veggies to a bowl filled with icy water. The ice-cold water will stop the cooking process and help set the bright green color and crisp texture.

Steps to make Lemon Asparagus Pasta Salad

Cook pasta

Cook 8 ounces pasta according to the package directions.

Drain and run under cold water

Once cooked, drain and run under cold water. Shake off as much water as possible and transfer to a large salad bowl.

Cook asparagus

Meanwhile, bring a pot of water to a boil. Add 1 cup chopped asparagus and blanche for 2-3 minutes.

Shock asparagus

Once cooked, immediately transfer to a bowl with ice water. Then drain and add to the salad bowl too.

Make dressing

In a mason jar, combine ¼ cup lemon juice, ¼ olive oil, 1 minced clove garlic, 1 teaspoon mustard, 1 teaspoon honey or maple syrup to keep it vegan, 1 pinch salt, and 1 pinch black pepper. Close the jar tightly and shake vigorously.

Combine salad ingredients

To the bowl of pasta and asparagus, add 2 tablespoons chopped red onion, 2 tablespoons chopped pistachios, 1 handful chopped basil, and 1 handful chopped parsley.

Dress salad

Pour the dressing over the salad and toss well until well coated.
