To make the Low-Carb Chocolate Cookies, you will need the following ingredients:
In a bowl with a hand mixer, cream together ¼ cup butter and 2 tablespoons cream cheese. Add ⅓ cup low-carb sugar and ¼ teaspoon salt and cream until light and fluffy.
Add in 1 egg, 1 teaspoon vanilla extract, and 1 teaspoon stevia and beat until combined.
In a small bowl, combine together with a whisk ¾ cup almond flour, ⅓ cup sesame flour, 2 tablespoons unsweetened cocoa powder, ½ a teaspoon espresso powder, and ¼ teaspoon xanthan gum.
Add the dry ingredients into the bowl with wet ingredients and mix well. The dough will be soft and sticky.
Scrape the dough onto a piece of plastic wrap and shape it into a rough log. Fold the wrap over the log and roll the dough into a cylinder. Refrigerate for at least 6 hours or several days.
When ready to bake, preheat the oven to 350 °F.
Slice the cookie dough into 16 cookies and place on a lined baking sheet.
Bake the cookies for 10 to 15 minutes. Remove from the oven and cool on a baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Meanwhile, place 2 ounces dark chocolate, ¼ cup heavy cream, and 1 tablespoon butter in a microwave-safe bowl and heat at 30-second intervals until melted. Mix with a whisk until smooth. Place the chocolate mixture into a zip-loc bag and use the scissors to snip off the corner.
Drizzle over cooled cookies and sprinkle with sesame seeds, then set aside until set.
Serve these cookies with a glass of nut milk or a cup of coffee and enjoy!
