To make Muffin Frittatas, you will need the following ingredients:
Preheat the oven to 375 °F and spray a 6-cup muffin tray with cooking spray.
In a large skillet, over medium heat, cook the sausages until golden brown, gently breaking the meat apart with a wooden spoon. Once cooked, drain the meat on some paper towels.
In a large bowl, lightly mix together the eggs, milk, Parmesan cheese, salt and pepper.
Portion the mixture between the 6 muffins and top each with the roasted red pepper, sausages and basil.
Bake in the preheated oven, for about 12-15 minutes, until the eggs are set.
Let them cool to a warm temperature before serving.
