This Smoked Mackerel & Leek Hash with Horseradish is a delicious alternative savory breakfast. I love to make this in the week after Christmas when I am tired of turkey and craving some strong flavors. In steps oily and slightly smoky mackerel and strong fiery horse radish. This is a flavor combination that shouldn’t work but somehow does!
It couldn’t be easier to prep either. Simply cook some new potatoes in the microwave. While the potatoes cook, cook some leeks in a frying pan. Add the cooked potatoes to the pan and crisp them in the hot oil. Flake in the mackerel. Break four eggs into the pan and cover with a lid until they are cooked. Serve with horseradish on the side.
To make Smoked Mackerel & Leek Hash with Horseradish, you will need the following ingredients:
Place the potatoes in a large microwaveable bowl with a dash of water. Cover and cook them for 5 minutes until tender.
Place the oil in a frying pan over medium heat. Add the leeks and a pinch of salt and cook them gently for 10 minutes, stirring occasionally.
Add the potatoes and increase the heat. Fry the potatoes for a few minutes until they are crisp on the outside.
Add the mackerel flakes and stir through.
Create four indents in the leek and potato mixture using a wooden spoon. Break an egg into each indent. Season to taste. Cover the pan and cook the eggs for 6-8 minutes until the whites set but the yolks are runny.
Place the pan in the middle of the table with a bowl of horseradish alongside it, and let everyone serve themselves.

Loving it already going to be making this again for sure, delicious.
Not as good as the grilled mackereal with pickled gooseberries but I think I'd make it again.
Had this with some cheesy garlic bread then made cherry cheesecake for dessert, loved everything!!
Quite good love the leek hash with horseradish taste when together.
Used a little less horseradish since I'm not usually a fan of it but I enjoyed the meal
Fish dinner is the best kind of dinner it was absolutely filled with flavor and mouth watering!
I used olive oil instead of vegetable oil and added some lemon juice to this too.
