1 tsp Olive oil
1 tbsp Balsamic vinegar
2 tbsp Maple syrup
Salt to taste
Black pepper to taste
¼ cup Feta cheese crumbled
2 tbsp Cranberries dried
2 tbsp Pumpkin seeds roasted

This Maple Oven-Roasted Asparagus is one of the greatest recipes to cook during asparagus season when this delicious and healthy vegetable is best. In this recipe, fresh asparagus is mixed with balsamic vinegar and maple syrup before roasting it in the oven until it is tender. Before serving, top with a combination of feta cheese, pumpkin seeds and dried cranberries.

Start by making the asparagus coating from olive oil, maple syrup and balsamic vinegar. Coat the asparagus with the balsamic mixture and spread on a baking sheet. Transfer to the oven. While the asparagus cooks, make a topping from feta cheese, seeds and cranberries. Once cooked, top with the feta mixture and serve immediately.

Steps to make Maple Oven-Roasted Asparagus

Preheat the oven and prepare a baking sheet

Heat your oven to 450 °F and line a baking sheet with parchment paper and lightly coat with cooking spray.

Make dressing

Combine 1 teaspoon of olive oil with 1 tablespoon of balsamic vinegar and 2 tablespoons of maple syrup in a small bowl.

Prepare asparagus

Arrange the asparagus on the baking sheet in a single layer. Season to taste with salt and pepper and pour over the maple syrup mixture. Toss to ensure the asparagus is evenly coated.

Roast

Roast in the oven for 7-10 minutes until the asparagus is tender. Remove the cooked asparagus from the oven and toss well to coat with the balsamic mixture.

Make the topping

As the asparagus cooks, toss ¼ cup of feta cheese, 2 tablespoons of cranberries and 2 tablespoons of pumpkin seeds together in a small bowl.

Top with feta mixture

Arrange the asparagus on a serving plate and sprinkle the feta mixture over the top.

Serve

Serve immediately.
