1 cup Chicken broth
¾ cup Couscous uncooked
1 cup Tomatoes cubed plum (Roma)
1 cup Cucumber cubed, unpeeled
½ cup Kalamata olives halved, pitted
¼ cup Spring onions chopped
¼ cup fresh Dill weed chopped, or 1 tbsp dried
2 tbsp Lemon juice
2 tbsp Olive oil or vegetable oil

Boil broth

In 2-quart saucepan, bring the broth to a boil.

Cook couscous

Add the couscous and stir before removing from the heat. Cover and let stand to cook for 5 minutes.

Prepare couscous salad

In a large bowl, toss the tomatoes, cucumber, olives, green onions, dill weed and couscous, to mix.

Add dressing

In a small mixing bowl, whisk the lemon juice, oil and salt together until well blended. Pour over couscous mixture.

Refrigerate

Cover with plastic wrap and refrigerate for 1 hour to marinate the flavors.
