2 tbsp Olive oil extra virgin
1 large Yellow onions finely chopped
1 large clove Garlic chopped
Salt to taste
Black pepper to taste
1 ½ tsp Ground coriander
1 ½ tsp Cumin ground
1 ½ tsp Sumac
2 tsp Dried mint flakes
1 pinch Sugar
1 tbsp All-purpose flour
6 cups Vegetable broth low-sodium
3 cups Water more if needed
12 oz Spinach frozen cut leaf
1 ½ cups Lentils small brown , rinsed
1 Lime juice
2 cups Parsley chopped flat leaf

This Mediterranean Spicy Spinach Lentil Soup is simply bursting with mediterranean flavors and ingredients. I love this spicy soup so much. It’s a real warmer on a cold day. I often make a double batch so I can take some for lunch the next day and I can tell you that I never look forward to my lunch more than when I bring a bowl of this soup!

It’s so easy to make too – simple fry off the veggies in stages. Then add broth and water and simmer until the lentils are cooked and soft. One tip – halfway through the cooking time, check the liquid levels. If the consistency is a bit thick, you might need to add a little bit of hot water. I serve this soup with warmed pita or a fresh rustic loaf if I have one.

So, how do you make Mediterranean Spicy Spinach Lentil Soup?

Steps to make Mediterranean Spicy Spinach Lentil Soup


Heat the oil


Heat 2 tablespoons of olive oil in a large pot or Dutch oven.


Saute the onions


Saute the onions until soft and golden brown.


Add garlic and seasoning


Stir in the garlic, coriander, ground cumin, sumac, crushed red peppers, dried mint, sugar and flour. Cook on medium heat for about 2 minutes, stirring regularly.


Add broth and water and bring to a boil


Pour in the broth and water and bring to a hard boil.


Mix in remaining spinach and lentils and simmer


Add the lentils and frozen spinach. Continue to cook on high for about 5 minutes. Turn the heat down to medium-low, cover and simmer for 20 minutes until the lentils are fully cooked and tender.


Add lime juice and parsley


Add the lime juice and parsley. Remove the soup from the heat and allow to sit covered for 5 minutes or so.



Serve in large soup bowls with pita or a fresh rustic loaf.
