This Microwave Minestrone is packed with beans, vegetables, and pasta, and it all comes together in about 15 minutes, making it the perfect weeknight meal to serve at the end of a hectic day.
To start, boil the pasta separately from the soup. While the pasta is cooking, slice up the carrots, celery, and zucchini. Dice the bell pepper and chop the onion. Once you’ve prepped the vegetables, the soup comes together pretty quickly. In a microwave-safe bowl, combine the prepped vegetables and drizzle with olive oil. Toss to coat and microwave on high for 3 minutes. Then add the beans, canned tomatoes, cooked pasta shells, dried basil, salt and black pepper. Microwave on high for 9 to 11 minutes. In a 2-quart microwave-safe bowl, combine 1 cup carrots, 1 cup celery, 1 cup zucchini, ½ cup diced yellow bell pepper, and 1 chopped onion. Drizzle with 1 tablespoon olive oil and toss to coat.
