As you know if you’ve followed my recipes that I love to entertain. Cooking for people is my passion and these Mini Chili Beef Pies are a great recipe to feed a crowd be it at a party or a picnic! They always go down a treat.
Start by making chili sauce. While the chili cooks, take the pastry and cut out circles with a cookie cutter. Line a mini muffin tray with pastry and bake slightly. As the pastry bakes, cook some potatoes in boiling water. Once cooked, drain the potatoes and combine with sour cream and chives to Smake the mashed potato topping. Assemble the pies by spooning chili into the pastry cases and top with mash before baking until golden.
To make Mini Chili Beef Pies, you will need the following ingredients:
Heat 1 tablespoon of sunflower oil in a pan. Sauté 1 small chopped onion for 5 minutes until soft. Add 1 teaspoon cumin and 2 teaspoon chili powder and continue to sauté for 1 minute.
Stir in 250 grams of minced beef and cook for a few more minutes before adding tomato purée, stock and cinnamon. Give the mixture a stir. Bring the chili to a boil and simmer for 15-20 minutes until reduced. Add kidney beans 5 minutes before the end of the cooking time. Check seasoning and cool.
Preheat the oven to 390 °F.
Take the rolled pastry and use a cookie cutter to cut out 12 circles from the pastry. Line a 12-hole mini muffin tray with the pastry circle.
Using a fork, prick the pastry in the muffin tray. Line with parchment paper and fill with baking beans. Bake the pastry in the oven for 10 minutes. Remove the beans and paper and continue to cook for 5 more minutes until the pastry is golden. Remove and cool on a wire rack. Repeat with the remaining pastry.
Boil cubes of potato in boiling water until tender. Drain well.
Mash the potato and stir through 3 tablespoons soured cream and seasoning. Add 2 tablespoons chopped chives and mix well.
Place 1-2 teaspoons of chili mix into each of the pastry cases. Top with a teaspoon of mash and fluff with a fork.
Bake in the oven for 15 minutes.
Leave to cool slightly before serving.
