Peel the eggplants and chop the flesh into small pieces. Place the flesh in a clean bowl and mash with a fork. Add the tahini, plain yogurt (I use vegan), minced garlic, lemon juice, and salt to taste. Mix until well combined. Serve with a drizzle of extra-virgin olive oil and pita bread. Enjoy!
To make the Moutabel, you will need the following ingredients:
Preheat the oven to 450 °F.
Pierce 3 medium eggplants with a fork and place on a baking sheet.
Roast the eggplants until they start to collapse, about 35-45 minutes.
Once roasted, place the eggplants in a bowl and cover for 5 minutes to steam.
Peel the eggplants and discard the skin. Roughly chop the eggplant and place the flesh into a large bowl.
Add in 4 tablespoons tahini, 2 tablespoons yogurt, 2 minced garlic cloves, lemon juice, and salt to taste and mash everything until well combined and creamy.
Drizzle the moutabel with extra-virgin olive oil and sprinkle with pomegranate arils. Serve with warm pita bread. Enjoy!
