6 tbsp Water cold
1 cup All-purpose flour
1⁄2 tsp Salt
For cheese filling:
2 cups Cottage cheese
2 Egg yolks large
2 tsp Heavy whipping cream
1⁄4 tsp Salt
1 tsp Fresh dill chopped, weed or 1/2 tsp dried dill weed
For frying:
1⁄8 cup Butter
For dotting:
1⁄4 cup Butter
For serving:
Sour cream

Nalesniki – Ukrainian Crepes

These homemade Nalesniki – Ukrainian Crepes, aka nalysnyky, are thin crepes rolled up with a savory cheese filling and baked in the oven until golden brown and deliciously tender. If you crave comfort food for breakfast or brunch, you will love these. Truly comforting and a real joy to eat!

The batter for Ukrainian nalesniki is traditionally made with flour, eggs, milk, water, and a pinch of salt. The filling includes cottage cheese, egg yolks, a little heavy cream, a few snippets of fresh dill, and a pinch of salt. Once filled, the crepes are rolled and baked in the oven. Serve these delicious nalesniki while still warm with melted butter, a dollop of sour cream, or yogurt.

Preheat oven

Preheat the oven to 250 °F.

Beat eggs

In a bowl, use a hand mixer to beat 4 large eggs until light and fluffy.

Prepare batter for crepes

Add in 1 cup whole milk, 6 tablespoons cold water, 1 cup all-purpose flour, and 1⁄2 teaspoon salt and beat until smooth.

Cook crepes

Heat and lightly butter a 6-inch non-stick pan on medium heat. Pour about ¼ cup of batter into the pan and swirl the pan to help the batter spread evenly. Cook the crepes one side only for about 1 minute or until lightly browned. Don’t turn over. Repeat until you have 12 crepes, buttering the pan each time. Stack the crepes and keep them warm in the oven at 250 °F.

Squeeze out moisture from cottage cheese

Place 2 cups cottage cheese in a cheesecloth and squeeze out the excess moisture.

Prepare cheese filling

To a mixing bowl, add the cottage cheese, 2 large egg yolks, 2 tablespoons heavy whipping cream, 1⁄4 teaspoon salt, and 1 teaspoon chopped fresh dill weed and mix to combine.

Increase oven temperature

Remove the warm crepes from the oven and increase the oven temperature to 350 °F.

Assemble crepes

Separate 1 crepe and place the brown side down on a clean working surface. Spoon 1 heaping tablespoon of the cheese filling closer to one edge of the crepe. Roll the crepe over the filling, tucking in each side to prevent the filling from falling out and forming a little bundle.

Place nalesniki in casserole dish

Fill and roll the remaining crepes. Place the filled nalesniki into a lightly buttered 13x9-inch oven-proof casserole dish in one layer. Dot the nalesniki with some butter.

Bake

Bake the nalesniki in the preheated oven for 20 minutes.

Serve

Serve while still hot with melted butter, a dollop of sour cream, or yogurt.
