Prepare grape pulp

Seed grapes by squeezing the grape flesh out of the skin. Cook the pulp down but putting the pulp through a fine mesh strainer and then re-combining the filtered pulp with the grape skins.

Cook grapes and sugar

In a large saucepan, mix the grapes skins, grape pulp and sugar and cook for 10-15 minutes until mixture reaches a gel-like texture. Test the consistency on an ice cold plate or with a candy thermometer.

Portion into jars

Once set, divide the jam into prepare canning jars, leaving ¼-inch space, open from the top.

Refrigerate

If using immediately, store in the refrigerator to chill.

Place jars in a water bath canner and process for 10 minutes, then turn off the heat and allow the jars to rest in the water for a further 5 minutes.

Rest and store

Remove jars from the water bath and rest for 24-48 hours to set to a complete gel and store in a cool, dry place.
