Who doesn’t love a sheet pan dinner? This One Pan Rosemary-Garlic Pork Chops is a really quick and delicious meal that will become a solid part of your weekly meal plan. The beauty of it is that all of the ingredients are cooked in the same pan, reducing clean up time.
To make this one pan dinner, start by tossing pork chops with olive oil, rosemary and grated lemon zest. Mix chickpeas, garlic, roasted red peppers and rosemary sprigs with olive oil, salt and a few pepper grinds. Scatter around the pork chops and pour chicken broth over the chickpea mixture. Broil until the pork is cooked. Sprinkle with parsley to garnish.
To make One Pan Rosemary-Garlic Pork Chops, you will need the following ingredients:
Preheat a broiler.
Place four pork chops on a rimmed baking sheet and toss with 1 tablespoon of olive oil, 1 teaspoon each of chopped rosemary and grated lemon zest. Season to taste with salt and pepper.
Add 1 can of chickpeas, 6 cloves garlic, ½ a cup of sliced roasted red peppers and a few rosemary sprigs. Drizzle with the remaining 3 tablespoons of olive oil, ½ a teaspoon of salt and a few grinds of black pepper. Scatter this mixture around the pork chops on the baking sheet.
Pour ⅓ cup of chicken broth over the chickpea mixture.
Broil the dish for about 20 to 22 minutes. Halfway through cooking, stir the chickpea mixture. Turn the baking sheet halfway through, until the chops are cooked through. A thermometer inserted into the pork will register 145 degrees when the meat is cooked.
Garnish with parsley and serve immediately.
