Ingredients

For the Walnuts:
1 heaping cup Walnuts raw
2 tsp Coconut oil or olive
1 tbsp Brown sugar
2 tsp Maple syrup or agave nectar
1 pinch Sea salt
1 pinch Cinnamon ground
1 pinch Cayenne pepper optional
For the Dressing:
¼ cup Balsamic vinegar
¼ cup Olive oil extra virgin
1 Shallots medium , minced
1 pinch Sea salt
1 pinch Black pepper
For the Salad:
1 (6-ounce) bag Mixed greens
1 ripe Pears Bosc or Bartlett , stem and seeds removed, thinly sliced lengthwise
¼ cup Dried cherries or cranberries

Prepare oven and baking sheet

Preheat oven to 350 °F and line a сast iron skillet with parchment paper.

Toast walnuts

Place walnuts on the lined сast iron skillet and toast for 7 minutes.

Season walnuts

Remove walnuts from oven and using a spatula, toss with oil, coconut sugar, maple syrup, sea salt, cinnamon and cayenne pepper, to combine.

Second roast

Return the сast iron skillet to the oven and roast again for 3-4 minutes until fragrant and golden brown. Then remove from heat and set aside to cool.

Prepare dressing

In a jar or mixing bowl, add the balsamic vinegar, olive oil, shallots and a pinch of salt and pepper together and whisk or shake vigorously to combine well. Adjust flavor as needed. Set aside.

Prepare salad

In a large mixing bowl, toss the greens, half of the sliced pears, dried cherries and half of the toasted walnuts together.

Dress salad

Drizzle with some of the salad dressing and combine.

Plate salad on serving dish and garnish with the remaining pears, walnuts and salad dressing.

Salad stores well in the fridge for up to 3 days. Store walnuts separately in a dry place.
