Lettuce leaves, wrapped and filled with medium cooked strip steak or boneless rib meat with sweet pineapple juice, grated garlic, salty soy sauce, ginger, honey and sesame oil that give this dish a Korean inspired flavor palette. To make Korean Pineapple Beef Lettuce Wraps, you will need the following ingredients:
In a medium bowl, whisk ¼ cup pineapple juice, 1 clove of grated garlic, 2 tablespoons soy sauce, ½ teaspoon of red pepper flakes, 1 tablespoon of grated ginger, 1 tablespoon of honey, and 1 tablespoon of sesame oil until well combined.
Thinly slice 1 pound of frozen strip steak or boneless rib meat.
Pour the prepared marinade over the meat slices and toss to generously coat. Cover and refrigerate for 30 minutes - 3 hours to marinate. Remove from the refrigerator 30 minutes before cooking.
In a large, stainless steel skillet on medium-high heat, heat 1 tablespoon of canola oil. Add half of the marinated meat, in an even layer and season with ¼ teaspoon of salt. Cook for about 1 minute until lightly browned then toss and cook for another 2 minutes until cooked with crispy edges. Set aside and repeat with remaining tablespoon of oil and final half of marinated meat.
Fill lettuce leaves with cooked meat mixture, sticky rice, scallions, chilis and peanuts, if you wish.
Serve immediately and enjoy!
