Poached Salmon with Cucumber Yogurt Salad is fancy enough for guests and easy enough for a weeknight meal. While this may sound like a restaurant-quality dish, it is actually one of the easiest ways to cook salmon. And it comes out perfect every single time.
Besides, the recipe comes together quickly, and it is fantastic with cool and flavorful cucumber yogurt salad served over tender salmon. Yummy!

Poaching is my new favorite way to cook salmon. It takes only 5 to 6 minutes of cooking time, and the whole dish is ready in less than 20 minutes. There is only one rule when cooking fish: don’t overcook it.

Steps to make Poached Salmon with Cucumber Yogurt Salad

Prepare poaching liquid

In a pot, heat 2 cups of water. Add in ½ a sliced lemon, 1 quartered onion, 2 cloves peeled garlic, and 2 tablespoons olive oil and bring to a boil. Then reduce heat and simmer for 6 minutes.

Season salmon

Meanwhile, season the salmon with coarse salt.

Poach salmon

Gently lower the salmon fillets into simmering liquid and reduce heat to a very gentle simmer. Cover and cook for about 5 minutes or until the salmon is opaque throughout.

Make cucumber yogurt salad

Meanwhile, mix ½ a cup of Greek yogurt, 3 tablespoons lemon juice, 2 sliced cucumbers, 2 tablespoons chopped fresh dill, and half of sliced green onions in a small bowl. Season with salt and black pepper to taste.

Remove salmon from liquid

Once the salmon is cooked, using a wide slotted spatula, remove it from the liquid.

Serve

Serve the poached salmon with cucumber yogurt salad. Sprinkle over the remaining green onions and enjoy!
