I have been making this gluten-free appetizer for my New Year’s parties for several years now. And I will never leave this party appetizer off because it is very popular. And I know why. The flavor combination of cheesy polenta, tangy yet sweet red onion chutney (aka red onion marmalade), and creamy, nutty Stilton cheese are just perfect for each other. Finish these bites with some chopped chives garnish, and you are ready to go!

Steps to make Polenta Bites with Stilton and Red Onion Chutney

Prepare a baking pan

Line a 8 by 10-inch baking pan with parchment paper and lightly oil it. Set aside.

Cook polenta

In a saucepan, bring 350 ml water to a boil. Slowly pour 150 grams polenta into boiling water and add 50 grams grated Parmesan cheese. Stir continuously and cook for 2 minutes until thick.

Leave polenta to cool

Transfer the cooked polenta into the prepared baking pan and spread it out evenly to about ½-inch thick. Let it cool completely.

Slice polenta

Once cool, slice the polenta into 24 squares.

Add chutney and cheese

Top each polenta bite with a small amount of caramelized red onion chutney and a piece of Stilton cheese.

Serve

Serve garnished with chopped chives. Enjoy!
