1 tbsp Oregano fresh, chopped
1 tsp Garlic minced
1 tsp Orange zest
1 tbsp Orange juice fresh
1 tsp Cumin ground
2 tbsp Olive oil divided
2 tsp Lime zest divided
2 tbsp Lime juice fresh ,divided
1⅛ tsp Kosher Salt divided
1 tsp Black pepper divided
4 (7-oz, 1-inch thick) Pork chops bone-in, center-cut
For veggies:
1 pound Red potatoes new , halved
½ Sweet onions large , cut into ½-inch wedges
1 cup Red bell pepper strips
Cooking spray canola oil
For salsa:
¾ cup Avocado cubed ripe
1 cup Oranges segments
2 tbsp Cilantro chopped fresh
1 tbsp Jalapeño pepper finely chopped seeded

Pork Chops with Orange-Avocado Salsa


This delicious Pork Chops with Orange-Avocado Salsa recipe is a super healthy and tasty dish served with a unique fruity salsa. You might think that the combination of orange, avocado, cilantro and jalapeño is a bit weird, but it is a flavor sensation! I love it!

To make this pork dish, start by seasoning pork chops with a fresh and spicy rub. Place potatoes, onion, and red bell pepper in a tray and bake in the oven. When almost cooked, add the pork to the oven. As the dish cooks, make the salsa by combining orange, avocado, cilantro, and jalapeño. Serve the dish with the salsa on top. Yum!

Steps to make Pork Chops with Orange-Avocado Salsa


Heat oven


Preheat the oven to 425 °F.


Season pork


Combine 1 tablespoon of chopped fresh oregano with 1 teaspoon of minced garlic, 1 teaspoon of orange zest plus 1 tablespoon of fresh orange juice, 1 teaspoon of ground cumin, 1 tablespoon of oil, 1 teaspoon of lime zest, and 1 tablespoon of lime juice, ½ a teaspoon of salt, and ½ a teaspoon of black pepper in a small bowl. Rub both sides of pork chops with mixture and set aside.


Bake potatoes, onion and peppers


Toss 1 pound of potatoes with onion wedges, 1 cup of bell pepper, ½ a teaspoon of salt, ¼ teaspoon of black pepper, and the remaining 1 tablespoon of oil in a bowl. Spread the veggies in an even layer on a rimmed baking sheet coated with cooking spray. Bake in the preheated oven for 20-22 minutes until the potatoes are just tender, stirring once.


Make orange and avocado salsa


Combine ¾ cup of avocado and 1 cup of orange segments with cilantro, jalapeño, the remaining 1 teaspoon of lime zest, and the remaining 1 tablespoon of lime juice. Season with the remaining ⅛ teaspoon of salt and ¼ teaspoon of pepper. Set aside.


Cook pork chops


Remove the potatoes from the oven and move the veggie mixture to the edges of the dish, leaving just enough room in the center for pork chops. Place the pork chops in the center of the pan, and return to the oven. Bake for 5 more minutes.




Turn the broiler to high, and broil the dish for 3 - 4 more minutes until a thermometer inserted in the thickest part of the pork chop registers 140 °F.



Serve the cooked pork chops with salsa.
