To make this dish, start by combining crushed thyme, sage, salt, and pepper and rub it evenly over pork chops. Cook pork chops in a non-stick skillet with butter and oil on each side, turning once. Remove the meat from the skillet and keep warm in a preheated oven. Make the sauce by combining raspberry jam, orange juice, and vinegar. Bring to a boil, and cook until the sauce reduces to the desired consistency. Spoon sauce onto a serving plate, and place the pork chops on top. Serve garnished with sprigs of thyme.
To make Pork Chops with Raspberry Sauce, you will need the following ingredients:
Preheat the oven to 200 °F.
Combine ½ a teaspoon each of crushed thyme and crushed dried sage, and ¼ teaspoon each of salt and pepper in a small bowl. Rub evenly over 4 pork chops.
Place 1 tablespoon of olive oil and 1 tablespoon of butter in a large non-stick skillet until the butter melts.
Cook the pork chops in the skillet for 4-5 minutes on each side. Once cooked, remove from the skillet and place in the warm oven.
In the same skillet, combine ¼ cup of seedless raspberry jam, 2 tablespoons of orange juice, and 2 tablespoons of white wine vinegar. Bring the sauce to a boil, and cook for 2 - 3 minutes, until the sauce reduces to your desired consistency.
Spoon the raspberry sauce onto a serving plate so that it pools. Place the cooked pork chops on top.
Serve immediately, garnished with fresh thyme.
