3 (1 pound) Red potatoes large, raw and peeled
3.5 oz Mozzarella cut in ½-inch cubes
½ cup Parmesan cheese freshly grated
Black pepper to taste
Salt to taste
For the Breading:
3 Eggs
½ cup All-purpose flour
2 cups Breadcrumbs
1 tbsp Ground paprika

Do I really need to describe these Potato Cheese Balls? Because I don’t even know where to begin. Breaded and crispy mashed potato balls with Parmesan cheese in the mixture and perfect mozzarella cubes in the center that melt and ooze with each bite. Everything you need for the best, cheesiest potato dish and when I start with one, I just can’t stop! 

To make Potato Cheese Balls, you will need the following ingredients:

Steps to make Potato Cheese Balls

Prepare potatoes

Soak 3 large and peeled potatoes in a bowl of cold water to remove starch then chop into big chunks.

Boil potatoes

In a large pot of salted water, boil the potato chunks until softened.

Prepare mozzarella

Drain 3.5 ounces of ½-inch mozzarella cubes on a paper towel.

Prepare breading

In 3 separate bowls, prepare the egg by whisking 3 eggs together in 1 bowl. Then, another bowl with ½ cup of flour and a third bowl with 2 cups of breadcrumbs, 1 tablespoon of paprika and some salt and pepper combined.

Mash potatoes

Drain the boiled potatoes and place in a large mixing bowl. Use a potato ricer or masher and mash the potatoes.

Add Parmesan

Add ½ cup of freshly grated Parmesan cheese and season with salt and pepper then mash to combine well.

Prepare potato balls

Use a tablespoon of the mixture to prepare about 25 potato and cheese balls about ½ ounce in weight.

Add mozzarella

Gently make a small hole in the center of each ball and place a mozzarella cube inside each one.

Bread balls

To bread the balls, dip each one into the flour bowl, then the beaten eggs and the breadcrumb mix to generously coat. Then dip once again into beaten eggs and finally into breadcrumbs mix. Place on a baking sheet lined with baking parchment paper.

Refrigerate

Refrigerate for a few minutes until the oil is hot.

Heat oil

In a large pot over medium heat, heat vegetable oil until it reaches 350 °F.

Deep fry balls

Working in batches, deep fry the potato balls for about 4 minutes until golden brown, taking care not to over fry and the mozzarella cheese doesn’t ooze out. Drain on paper towels.

Serve

Season with salt and pepper and serve hot with your favorite dipping sauce.
