Who doesn’t love Potato Nests: Hearty Ham and Cheese Filling? A feel good, delicious meal accompaniment of smooth mashed potato that has been baked in the oven to serve up a crispy, golden edge and filled with bacon bits and melted Swiss cheese.
I’d like to say this was my idea, but my sister actually designed this recipe and leveled up my original cheddar cheese option to melted Swiss cheese. And so, how could I not give her all the credit for this delicious recipe?

In a large pot of water, boil potatoes until extremely soft.
Mash potatoes as finely as possible.
Add egg, butter, half of the parmesan cheese and a good amount of salt and pepper to season the mashed potato. Fold to mix and combine well.
Transfer mashed potato mix to a piping bag with a star shaped nozzle and working on a baking sheet lined with parchment paper, starting from the center, pipe the mix into circles, about 3-inches wide. Continue around the edges to form a hollow inside.
Fill hollow potato nests with the cheese and bacon and sprinkle remaining Parmesan cheese over the top of the 6 nests.
Preheat oven to 375 °F.
Bake in a preheated oven for 20 minutes until golden.
Serve hot and enjoy!
