I love these Pumpkin Potato Gnocchi. I got the idea for this recipe from a delicious meal I ate in a taverna in Tuscany where I had the creamiest, tastiest gnocchi I’ve ever eaten! After the meal, I asked the waiter what the secret ingredient was and he said there were two: pumpkin and nutmeg!
To add an extra depth of flavor, I roast the pumpkin and potatoes in the oven before mixing them with flour, bread crumbs, parmesan, and egg yolks. I serve these gnocchi with a creamy bacon and cheese sauce.
To make my Pumpkin Potato Gnocchi, you will need the following ingredients:
Preheat the oven to 325 °F and line a baking sheet with parchment paper.
Chop the pumpkin into quarters and remove the seeds.
Place the pumpkin quarters and potatoes on the lined baking sheet. Prick potatoes several times with a fork. Drizzle with a little olive oil and cook in the oven for one hour. Remove from the oven and leave to cool slightly.
With a spoon, scrape out the pumpkin flesh. Place the contents in a bowl.
Peel the potatoes and add to the pumpkin. Mash the pumpkin along with potatoes until smooth.
Add the flour, bread crumbs, parmesan, and egg yolks. Season to taste with salt, pepper, and nutmeg. Mix the ingredients together until a smooth dough forms.
Divide the dough into 4 equal pieces. Roll each quarter into a log shape. Cut off ½ inch thick pieces from each log. Roll each piece into a small ball and press each one down with a fork.
Working in batches, place the gnocchi in salted boiling water and cook for 3 minutes.
Place the pancetta in a frying pan and cook over medium heat until crispy. Pour in the whipping cream. Let the mixture cook until the liquid reduces by half. Take the pan from the heat and stir in the Parmesan cheese. Season to taste with pepper.
Place the gnocchi in a separate pan and fry them on both sides over medium heat.
Serve the gnocchi coated with the sauce. Sprinkle cheese and basil over the top and enjoy!
