In a skillet, toast ½ cup walnuts with 1 tablespoon olive oil.

In a blender or food processor, combine roasted beets, walnuts, 3 roughly chopped cloves garlic, ½ cup grated Parmesan, and 2 tablespoons lemon juice and pulse a few times.

While the blender is running, slowly add in ½ cup olive oil. Scrape down the sides as needed. Add some more oil or water to thin the pesto.

Season with salt and black pepper to taste and blend until well combined.
