To make Roasted Beets and Feta Cheese Salad with Sumac Dressing, you will need the following ingredients:
Preheat the oven to 400 °F.
Tightly wrap the beets in aluminum foil and arrange on a baking sheet. Bake in preheated oven for 45 minutes - an hour until beets are soft enough to pierce with the tip of a knife.
Remove from oven and set aside to cool. Once cooled, peel and chop beets into dice.
In a mixing bowl, whisk olive oil, lemon juice, mayonnaise or mustard, honey and sumac to combine. Season with salt and pepper to taste.
Divide salad greens equally between 4 plates. Top with red onion slices, diced beets and crumbled feta cheese.
