This Roasted Cod with Olives and Lemon is a delicious taste of the Greek Islands! Nothing says summer sunshine more than a combination of lemon, thyme and delicious fish. Served with tender potatoes. Bring a slice of summer to your kitchen all year round with this tasty meal. 

It is so simple to make this delicious dish. Start by placing lemon slices in a single layer on a baking pan. Sprinkle with thyme sprigs and olives. Cut each potato in half and place in a large bowl. Cover the potatoes with water and microwave until tender. Drain the potatoes and scatter them around the edge of the pan. Place the cod fillets on the lemon slices. Drizzle the whole dish with olive oil  and season with salt and pepper. Transfer the dish to the oven and roast until fish is cooked through. Serve with the potatoes and olives. Yum!

Steps to make Roasted Cod with Olives and Lemon

Heat oven

Preheat the oven to 450 °F.

Make lemon base for fish

Place 3 sliced small lemons in a single layer in a baking pan. Sprinkle with 8 thyme and 20 olives.

Cook potatoes

Cut each potato in half and place them in a large bowl. Cover with water and cook for about 10 minutes in the microwave until tender.

Drain and place in the baking pan

Drain the potatoes and place them around the edge of the baking pan with the lemons.

Place fish on the lemons

Place 6 cod fillets on the lemon slices and drizzle the fish and potatoes with 2 tablespoons of olive oil.

Season to taste with salt and pepper.

Reduce the oven temperature to 325 °F and roast the cod for 25 minutes until cooked through.

Serve

Serve immediately.
