In this recipe, I start by cooking the gnocchi in olive oil. Then I sauté onions, garlic and add water. Next I add the chard leaves, tomatoes, beans and pepper before stirring through the gnocchi and cheeses. I serve this straight from the pan with a crisp green salad on the side.
To make my Skillet Gnocchi with Chard & White Beans, you will need the following ingredients:
Heat a tablespoon of oil in a skillet over medium heat. Add the gnocchi and cook for 5-7 minutes until it starts to plump and turn brown. When cooked, place in a bowl and set aside.
Heat the remaining teaspoon of oil in the skillet. Add the onions and sauté over medium heat, stirring constantly for about 2 minutes.
Add the garlic and water. Stir and cook for about 4 minutes.
Add the chard leaves (or spinach if using) and cook while stirring for 1-2 minutes until the leaves start to wilt.
Mix the tomatoes, beans and pepper in the saucepan and bring to a simmer.
Add the gnocchi. Sprinkle in the mozzarella and Parmesan cheese. Place a lid on the skillet and continue to cook until the cheese melts and the sauce starts to bubble.
Serve immediately.
