1 Yellow onions thinly sliced
4 cloves Garlic minced
½ cup Water
6 cups Swiss chard or spinach leaves
1 (15 oz) can Diced tomatoes with Italian seasonings
1 (15 oz) can White beans rinsed
¼ tsp freshly ground Black pepper
½ cup part-skim Mozzarella shredded
¼ cup Parmesan cheese finely shredded

This Skillet Gnocchi with Chard & White Beans is a really good recipe if you are looking for a quick yet wholesome and filling midweek meal. I love chard and I grow it every year with my kids in the garden. Chard is very nutritious with large, tender green leaves and thick, crisp stalks. We always look forward to the first chard harvest!

In this recipe, I start by cooking the gnocchi in olive oil. Then I sauté onions, garlic and add water. Next I add the chard leaves, tomatoes, beans and pepper before stirring through the gnocchi and cheeses. I serve this straight from the pan with a crisp green salad on the side.

Steps to make Skillet Gnocchi with Chard & White Beans

Cook gnocchi

Heat a tablespoon of oil in a skillet over medium heat. Add the gnocchi and cook for 5-7 minutes until it starts to plump and turn brown. When cooked, place in a bowl and set aside.

Sauté onion

Heat the remaining teaspoon of oil in the skillet. Add the onions and sauté over medium heat, stirring constantly for about 2 minutes.

Add garlic and water

Add the garlic and water. Stir and cook for about 4 minutes.

Stir in the chard leaves

Add the chard leaves (or spinach if using) and cook while stirring for 1-2 minutes until the leaves start to wilt.

Mix in tomatoes, beans and pepper

Mix the tomatoes, beans and pepper in the saucepan and bring to a simmer.

Add the gnocchi. Sprinkle in the mozzarella and Parmesan cheese. Place a lid on the skillet and continue to cook until the cheese melts and the sauce starts to bubble.
