This Smoked Sausage and Vegetable Soup recipe is a great option for those evenings when you have a whole lot of leftover vegetables, chopping them up, throwing them together and boiling up a delicious, healthy and nutritious soup. I most prefer smoked turkey kielbasa sausage and my butcher has the best!
I add yellow onion, carrots, celery, yellow bell pepper, garlic, tomatoes, red potatoes, Italian seasoning, zucchini, chopped spinach and finally, shredded Parmesan cheese. Phew, it’s packed with all the best ingredients!Â
