Ingredients

1 Red onion coarsely chopped ½, thinly slice ½
2 Chicken Breast skinless, boneless chicken breasts (about 1 pound, 5 ounces)
3 cloves Garlic smashed
1 Red chili halved, thinly sliced, divided
2 cups Cilantro leaves with tender stems, divided
1 tbsp Kosher Salt divided, plus more
3 tbsp Vegetable oil
â…“ cup Peanuts preferably skin-on
2 tbsp Lime juice Juice from 1 lime
½ medium head Green cabbage very thinly sliced
2 Cucumbers thinly sliced

This Spicy Chicken and Cabbage Salad is a real wow factor. Fresh and full of the best colors and flavors with a toss up of juicy chicken, distinct red onions, garlic, red chili, cilantro leaves, peanuts, crunchy green cabbage and Persian cucumbers and simply seasoned with oil, kosher salt crystals and some lime juice.

Steps to make Spicy Chicken and Cabbage Salad

Combine chicken and onion mix

In a medium pot over medium heat, add ½ chopped onion, 2 chicken breasts, 3 cloves of minced garlic, ½ a thinly sliced chili, 1 cup cilantro leaves, 2½ teaspoons of salt and 4 cups water and bring to a slow simmer.

Poach chicken

Once simmering, reduce heat to low and cook for about 10-12 minutes until chicken is cooked and juices run clear. Reserve ½ cup of the cooking liquid.

Shred chicken

Place cooked chicken on a slicing board and allow to cool before roughly shredding.

Cook peanuts

Meanwhile, in a small skillet over medium heat, heat oil and and â…“ cup of peanuts with skin still on. Cooking, tossing frequently, for about 3-5 minutes until golden. Reserving cooking oil.

Chop peanuts

Roughly chop golden peanuts.

Prepare dressing

In a large bowl, whisk reserved, chilled cooking liquid from the poached chicken, reserved peanut cooking oil and 2 tablespoons of lime juice until combined.

Season cabbage

Add ½ head of thinly sliced cabbage and season with salt. Use your hands to toss and massage the cabbage until generously coated and softened.

Add salad ingredients

Add 2 thinly sliced cucumbers, poached chicken, remaining slices form ½ chili, 1 cup cilantro, slices from the remaining ½ onion, half of the cooked peanuts and a pinch of salt. Toss to combine and coat evenly.

Serve

Garnish with sprinkles from the remaining peanuts on top, to serve!
