Ingredients

For marinade
4 tbsp Buffalo wing sauce
1 tbsp Honey
1 tbsp Lime juice fresh
½ tsp Ground paprika
½ tsp onion powder Onion powder
For dressing
1 cup Greek yogurt nonfat
1 tsp Garlic powder
1 tbsp Olive oil
1 tsp Fresh dill chopped or dried dill
1 tsp Parsley fresh, chopped or dried parsley
For the salad
1 ½ lbs Chicken Breast boneless skinless
8 cups Baby spinach
1 Orange bell pepper or red , sliced
1 Cucumber sliced
1 stalk Celery chopped
½ Red onion sliced
Salt to taste
Black pepper to taste

This is a fantastic Spicy Grilled Chicken Salad recipe for summer. I love this salad – it is one of my favorites. I think the secret to this salad’s success is the delicious buffalo marinade that the chicken sits in for up to four hours. Marinating the chicken makes it tender and oozes flavor.

To make this salad, start by marinating chicken. As the chicken marinates, make a dressing from Greek yogurt, olive oil, fresh herbs and garlic powder. Grill the chicken and slice it to prepare the topping for the salad. Assemble the salad in your favorite salad bowl and drizzle with dressing. Top with freshly chopped parsley and enjoy.

Steps to make Spicy Grilled Chicken Salad

Marinate chicken

Mix together 4 tablespoons of buffalo sauce, 1 tablespoon each of honey and fresh lime juice, ½ a teaspoon of paprika and ½ a teaspoon of onion powder. Season with salt and pepper to taste. Place 1½ pounds of chicken breasts in the mixture to marinate for 3-4 hours.

Prepare the dressing

In a separate small bowl, mix 1 cup of nonfat Greek yogurt, 1 teaspoon of garlic powder, 1 tablespoon of olive oil and a teaspoon each of fresh dill and parsley to make a dressing. Place in the refrigerator to chill while the chicken marinates.

Heat grill

Preheat a grill or grill pan.

Grill chicken

Remove the chicken breasts from the marinade and allow the excess to drip off. Grill the chicken for 5-7 minutes on each side. Once cooked, remove the chicken from the grill and let the chicken rest for at least 5 minutes.

Slice chicken

Once the chicken cools, slice it into even pieces.

Assemble the salad

In a large bowl, combine 8 cups of baby spinach, 1 sliced red bell pepper, 1 sliced cucumber, 1 chopped celery stalk, and ½ a sliced red onion. Top with sliced chicken and drizzle over the dressing.

Serve

Serve with chopped fresh parsley and enjoy!
