Slice a pocket for the filling into each chicken breast using a sharp knife. Be careful you don’t cut right through.

Layer ¼ cup each of sun-dried tomatoes, chopped spinach, feta and mozzarella cheese into each pocket. Seal the chicken breasts using toothpicks to keep the filling in.

Sear chicken

Place a skillet over medium heat and sear the chicken on both sides.

Cook the chicken

Reduce the heat to low and continue to cook the chicken on the stove top. Alternatively, you can bake the stuffed chicken breasts in the oven at 375 ºF until cooked through.
