I am always looking for new Halloween recipes to make with my kids at this time of year. One recipe that we all love is this Spooky Halloween Monster Mash Soup which I make using my favorite red soup and little eyeballs made from sushi rice!
Start by heating up your soup. As it heats, cook the sushi rice. Take ½ a nori sheet and use scissors to cut out circular shapes for eyes. When the rice has cooled, roll portions of it into balls and place the nori eyeballs on top. To support the eyeballs in the soup, place a small ramekin or dipping bowl upside down in the center of your soup bowl before adding the soup. The small bowl will act as an invisible shelf if needed. Or you can use zucchini noodles in the soup below each rice eyeball and they will keep the eyeballs on the surface of the soup.
To make the Spooky Halloween Monster Mash Soup you will need the following ingredients:
Place sushi rice in a strainer and rinse until the water runs clear.
Place ½ a cup of uncooked rice in a medium pot with 1 cup of water. Bring to a rolling boil. Once boiling, reduce the heat to the lowest setting and cover. Cook over low heat for 20 minutes.
Heat your soup on the stove top or in the microwave.
As the rice cooks, cut the nori into circles using a pair of kitchen scissors. Set to one side.
Once the rice is cooked and soft, fluff with a fork and transfer to a bowl to cool enough to handle. Once cool, scoop small portions into the palm of your hand and gently roll each portion into a ball. Place a nori circle in the center of each ball.
Place zucchini noodles in the bottom of each bowl and fill with soup.
Gently place the rice eyeballs on the zucchini noodles. You could use a small upturned bowl if you don’t want to use noodles.
Serve drizzled with sriracha (blood) or Greek yogurt or sour cream if the sriracha is too hot!
