Add some herby, garlicky goat cheese and some freshly ground black pepper, blend until smooth, and you have a delicious bowl of cheesy cauliflower yumminess to enjoy. And that isn’t even the best part – it’s totally low-carb!

It’s a great alternative to potato or sweet potato mash. And by using the cauliflower, it’s quicker and easier than other steamed cauliflower recipes. This mash is just that little bit out of the ordinary and it’s a perfect side to serve if you’re following a Keto diet.

Prepare cauliflower for microwaving

Add the cauliflower to a microwave-safe bowl. Pour in a little water to cover the bottom of the bowl.

Microwave the cauliflower

Place a paper towel or plate over the top of the bowl and microwave the cauliflower on high for 4-5 minutes until it has softened.

Blend the cauliflower with the cheese

Drain the water from the cauliflower and add it to a food processor bowl along with the goat cheese. Blend until smooth.
