Preheat the oven to 400 °F and line a small and shallow roasting pan with parchment paper.

Slice dates

Slice each date in half lengthwise, but don’t cut all the way through. Remove and discard the pit.

Stuff each date with a small piece of Stilton cheese and gently squeeze to close.

Wrap with pancetta

Using the back of a knife, stretch the pancetta and half each one widthwise. Wrap each date with half a pancetta rasher. Secure each date with a wooden skewer.

Place the stuffed and wrapped dates on the prepared roasting pan. Bake for 15-17 minutes until the pancetta is crisping.

Serve hot, drizzled with 1 tablespoon balsamic glaze and garnished with arugula. Enjoy!
