To make this delicious jam, start by blending strawberries until smooth. Strain into a large saucepan and stir in sugar. Whisk lemon juice and cornstarch together and gradually whisk into the strawberry mixture. Bring the mixture to a boil over medium heat, and cook while whisking constantly for about 1 minute. Remove the saucepan from the heat. Chill the jam for at least 2 hours or until cold. The jam will keep in the refrigerator for up to one week.
