2 tbsp Olive oil
1 Onion large, thinly sliced
2 cloves Garlic chopped
1 knob Fresh ginger chopped
Salt to taste
1 tsp Cinnamon plus a pinch extra
1 tsp Garam masala
100 g Bulgur
25 g Sultanas
20 g Parsley leaves roughly chopped
50 g Flaked almonds toasted
4 Chicken Breast boneless, skin-on

These Sweet and Spicy Stuffed Chicken Breasts are a new and exciting way to stuff chicken breasts with delicious Indian flavors combining onions, garlic, fresh root ginger, cinnamon, garam masala, bulgur wheat, sultanas, freshly chopped parsley and toasted almond flakes. This is a bite full of happiness with a mixture of spices that you’re going to love.

To make Sweet and Spicy Stuffed Chicken Breasts, you will need the following ingredients:

Steps to make Sweet and Spicy Stuffed Chicken Breasts

Preheat oven

Preheat the oven to 390 °F.

Cook onion, garlic, ginger

In a medium pan, heat 2 tablespoons of oil and add 1 thinly sliced onion, 2 cloves of chopped garlic and 1 knob of fresh ginger root. Season to taste, then cook for about 8 minutes until softened.

Add spices

Add 1 teaspoon of cinnamon and 1 teaspoon of garam masala and cook for another 2 minutes.

Cook bulgur wheat and sultanas

In a pot, cover 100 grams of bulgur wheat and 25 grams of sultanas with boiling water and boil for about 5 minutes until softened. Drain excess water and add to the pan of cooked onions.

Add parsley and almonds

Add 20 grams of freshly chopped parsley and 50 grams of toasted almonds flakes and mix to combine.

Prepare chicken breasts

Slice through 4 chicken breasts, lengthwise, taking care not to cut through. Divide the prepared stuffing between the 4 sliced chicken breasts then fold to close and rub some cinnamon into the skins. Tightly pack the 4 stuffed breasts into a small baking dish.

Bake

Bake stuffed chicken breasts in the preheated oven for 25 minutes until cooked.

Serve

Serve with any leftover stuffing mix and some vegetables and salad of your choice!
